Week two of healthy living has gone well! I was able to make it to the gym each morning again this week. It has actually started to become a habit and even has me waking up earlier on the weekends, feeling like I have so much more of the day to utilize, I love it! We’ve also continued to eat well, this time I switched up my lunch a little because I always need variety in my life! For lunch this week I made a no carb Tomato Tuna Melt! I am including the recipe that I followed along below, it is a great alternative if you are craving a tuna melt, without feeling like you are dieting! I am someone who usually adds a tomato slice under the melty cheese of my tuna melt, so this was a great switcheroo for me!
- 1 whole tomato
- 2 cans of Bumblebee Tuna Chunk Light in Water
- 2 tablespoons green onion chopped
- 2 tablespoons bell pepper chopped (use any color you want!)
- 1 tablespoon Light Mayonnaise
- 1/2 tablespoon Dijon mustard
- salt and pepper to taste
- 2% cheese slices
Slice the tomato into large slices. I was able to get about 4 slices from the whole tomato. Place the tomato slices on to a cookie sheet lined with foil. Set aside.
Open and drain the Bumblebee Tuna, spoon into a medium sized bowl. Add in the chopped up green onion, bell pepper, light mayonnaise, dijon, and salt and pepper. Stir to combine.
Add one spoonful of tuna mixture onto each tomato slice. Top each tomato with a slice of cheese.
Place under the broiler and cook for about 2-3 minutes just until the cheese is melted.
Serve immediately and enjoy!
This recipe is super simple, and if your office has a toaster oven you can make it at work! I adjusted the recipe a little. I added a small yellow onion instead of green onion because it was leftover from another recipe, but I would also use red onion as another great alternative. I also only used one can of tuna and cut the mayo and Dijon mustard in half to lighten the amount in a serving, I also used half a slice of light cheddar cheese to also lighten the fat there. It was super yummy and having a warm lunch in the colder months makes all the difference!
